Kristina Carrillo-Bucaram is a highly respected Raw Vegan Educator, Chef, Speaker and Author. At the remarkably young age of 18 Kristina knew that she was going to share her zest and passion for eating raw organic produce with the world. Kristina, with the help of various volunteers
known as,“co-operators” established the first non-profit in Houston,Texas to offer affordable, organic raw fruits and vegetables.Today, the co-op feeds thousands of followers in the fourth largest city in the nation.

When Kristina was only 16, she was diagnosed with hyperglycemia, which can be considered as the onset of diabetes.The disease took over her health hospitalizing her and creating a cycle of fluctuating medication and illness. Her inquisitive nature led her to believe that her diet was directly correlated with her disease.Through
a timely introduction to juicing advocate, John Rose at a visit to Whole Foods, he challenged Kristina to adapt a complete raw vegan approach to her diet. Kristina immediately saw an improvement in her health by leaving processed foods behind, consuming only non-cooked, raw fruits and vegetables.This discovery changed her life forever. She considers the day she became a Raw-Vegan as the first day of the beginning of her new life.

With a serious passion for the raw food lifestyle, Kristina pursued a triple major at Rice University that included majoring in Kinesiology, Ceramics, and Voice. At Rice, she was part of the elite and prestigious honorary educational society, Phi Beta Kappa and graduated Cum Laude.
Her personal quest for perfecting the knowledge she had acquired, led her to study directly under the guidance of the famed Dr. Douglas Graham, founder of the 80/10/10 principles of raw lifestyle. Under Dr. Graham’s mentorship she went to Costa Rica where she practiced organic farming and community agriculture.This knowledge was put to good use when she returned to Houston.

n September 2007, Kristina full-circled her experience into Rawfully Organic Co-Op.Today, the Co-op, has raised over $2 million dollars for the Houston Agricultural and Organic Farming Community. The Co-op has over 4,000 registered members and serves approximately 1,500 families each month.There are three drop offs in metropolitan areas of Houston on Tuesdays,Thursdays, and Saturdays and designated porch pick-ups for more suburban areas. Kristina is now considered a Houston celebrity and expert in the Raw Food lifestyle. Her calendar is continually booked with presentations to health organizations, hospitals, schools and mother’s groups in Houston. Her achievements led her to be featured as the emcee in the first annual Woodstock Fruit Festival, where she led a seven day event of lectures, classes, presentations, and demonstrations.

Her love affair with fruits and vegetables developed into a culinary mastery of raw plant based cuisine. She will continue pursuing her life’s mission to bring raw, vegan eating to the mainstream and raise money and awareness about health through
her non-profit, Rawfully Organic Co-op. She is in the process of developing an educational Raw-Vegan Coaching website, Fully Raw. Currently Kristina is all working on a recipe book and DVD scheduled for release in mid 2012 and has a calendar full of presentations and demonstrations well into the 2013.
